A lot of the problem with agriculture is that is practiced on a large scale, and that is too big for the land to hold all in one place.  The use of animals is not optional, but is fundamentally necessary to sustainable agriculture in most climates.  Without their action, the land would not become fertile.  They are microbe factories and distribution systems, they are natural and non-toxic, and a small amount of their milk and meat in the diet can make the difference between starving on vegetables alone and having a balanced diet.  That being said, nothing good comes out of factory farms, and the ones that do meat are often quite vile.  Please try looking into biodynamics, it produces probably the optimum results by using varieties and types of animals suiting the type of land.  And they are like the capital, and the fertility they leave is like the profit.
